  • 1 can Diced Tomatoes canned or fresh
  • 1 medium Green Bell Pepper any bell pepper variant is fine
  • 2 medium Carrots can substitute with other root vegetables
  • 1/4 cup Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat a large pot over medium-high heat. Add a tablespoon of olive oil and sear the beef chuck for 5 to 7 minutes until browned.
  2. Lower the heat, add onions, and sauté for 4 to 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in tomato paste, followed by spices. Cook for 30 seconds to bloom the spices.
  4. Return browned beef to the pot, pour in beef broth and add diced tomatoes. Bring to boil, then reduce to simmer for 45 minutes.
  5. Add chopped bell peppers and carrots, stir, cover, and continue to simmer for 15 minutes until vegetables are tender.
  6. Taste and adjust seasoning with salt and black pepper.
  7. Serve in bowls, garnished with parsley. Enjoy with crusty bread or rice.
