Ingredients
  

For the Zucchini Boats
  • 2 medium Zucchini Cut lengthwise to form boats.
For the Filling
  • 200 g Feta Cheese Crumble for easy mixing.
  • 100 g Greek Yogurt Ensure it's strained.
  • 2 tablespoons Spring Onion Finely chopped.
  • 50 g Gruyere Cheese Can substitute with mozzarella.
  • 1 tablespoon Lemon Zest Use fresh lemon juice as an alternative.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • 2 tablespoons Parsley Chopped, or dill can be a substitute.
  • 2 tablespoons Olive Oil Extra virgin preferred.
  • 1 teaspoon Dried Oregano Can use fresh with increased quantity.
  • 1 to taste Salt Adjust according to preference.
  • 1 to taste Pepper Adjust according to preference.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (390°F).
  2. Cut off both the tops and bottoms of the medium-sized zucchinis, then slice them lengthwise to create shallow hollows.
  3. Brush the insides of each hollowed zucchini with olive oil and dried oregano. Season with salt and pepper. Roast for 12-15 minutes until slightly softened.
  4. In a mixing bowl, combine crumbled feta, strained Greek yogurt, spring onions, garlic powder, lemon zest, parsley, and a tablespoon of olive oil with oregano.
  5. Once the zucchini has cooled, reduce oven temperature to 180°C (356°F) and fill each boat with the cheese mixture, drizzling olive oil on top.
  6. Bake for approximately 30 minutes until the filling is set and golden.
  7. Allow to cool slightly before serving, drizzled with olive oil.
