Step-by-Step Instructions
  1. In a large mixing bowl, combine 2 cups of full-fat Greek yogurt, ½ cup of creamy peanut butter, ¼ cup of pure maple syrup, 1 teaspoon of pure vanilla extract, and a pinch of sea salt. Stir until smooth and creamy.
  2. Pour the yogurt mixture evenly into 8 popsicle molds, filling each one to the top. Insert popsicle sticks and freeze for at least 2 hours.
  3. In a small saucepan over low heat, melt 1 cup of dark chocolate with 1 tablespoon of unrefined coconut oil, stirring constantly until smooth.
  4. Carefully remove the frozen yogurt bars from molds. Dip each bar into the melted chocolate mixture, coating generously.
  5. Place the dipped bars on a parchment-lined plate. Return to the freezer and let set for at least 30 minutes.
