- In a large mixing bowl, combine 2 cups of full-fat Greek yogurt, ½ cup of creamy peanut butter, ¼ cup of pure maple syrup, 1 teaspoon of pure vanilla extract, and a pinch of sea salt. Stir until smooth and creamy.
- Pour the yogurt mixture evenly into 8 popsicle molds, filling each one to the top. Insert popsicle sticks and freeze for at least 2 hours.
- In a small saucepan over low heat, melt 1 cup of dark chocolate with 1 tablespoon of unrefined coconut oil, stirring constantly until smooth.
- Carefully remove the frozen yogurt bars from molds. Dip each bar into the melted chocolate mixture, coating generously.
- Place the dipped bars on a parchment-lined plate. Return to the freezer and let set for at least 30 minutes.
- Once the chocolate coating is hardened, transfer bars to an airtight container and store in the freezer for up to one month.
