For the Chicken
  • 4 pieces Skin-on Chicken Thighs and Drumsticks
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper
  • 2 tablespoons Canola Oil or ghee/coconut oil
For the Glaze
  • 1 cup BBQ Sauce opt for Stubb’s Original
  • 1/4 cup Honey optional if BBQ sauce is sweet
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder

Method
 

Step‑by‑Step Instructions
  1. Gently season chicken thighs and drumsticks with kosher salt and black pepper. Set aside.
  2. Mix BBQ sauce, honey, Dijon mustard, vinegar, paprika, onion powder, and garlic powder in a bowl. Add chicken to mixture, coat well, and marinate in the refrigerator for at least 4 hours.
  3. Remove chicken from fridge, drain excess marinade, and pat dry. Brush with canola oil and season again with salt and pepper.
  4. Preheat grill to medium heat (350°F to 375°F) for 10-15 minutes.
  5. Grill chicken for 3-4 minutes on each side until grill marks appear.
  6. Move chicken to cooler side of the grill, cover, and cook for 15-20 minutes until it reaches an internal temperature of 165°F.
  7. Brush with reserved BBQ sauce during the last 3-5 minutes of cooking, then serve.
