  1. Prep Zucchini: Wash and dry zucchini, then grate it into a bowl. Squeeze out excess moisture with a towel.
  2. Mix Ingredients: Combine zucchini, eggs, cheeses, almond flour, coconut flour, psyllium husk, and seasonings in a bowl. Stir until combined.
  3. Preheat Oven: Heat oven to 375°F (190°C) and prepare a baking sheet with parchment paper and cooking spray.
  4. Shape Tortillas: Use a 1/4 cup scoop to place portions of mixture on the sheet. Flatten into 6-inch rounds.
  5. Bake: Bake tortillas for 12-15 minutes until edges are golden. For crispier edges, bake a bit longer.
  6. Cool: Let baked tortillas sit on the sheet for a few minutes to firm up.
