  • 1 tablespoon fresh thyme (or 1 tsp dried thyme) Italian seasoning can be swapped in.
  • 1 teaspoon cumin Optional.

For Garnishing (Optional)
  • 1/4 cup Parmesan cheese Leave out for a vegan option.

Step‑by‑Step Instructions for Mediterranean One‑Pot Pasta
  1. In a large pot, bring 3 cups of water to a rapid boil over medium-high heat.
  2. Once the water is boiling, add the gluten-free pasta along with the canned vegetable broth, sliced red onion, fire-roasted tomatoes, canned artichoke hearts, and black olives.
  3. Maintain high heat and bring the mixture back to a boil, stirring occasionally. Cook for about 15 minutes.
  4. After the pasta is cooked, check the consistency of the sauce. If it’s too thick, gradually ladle in hot water while stirring.
  5. Once the consistency is right, season the dish with salt and black pepper to taste and serve immediately, garnishing with basil or Parmesan cheese.
