Pea Pesto
  • 2 cups Frozen Peas Defrosted
  • 1 cup Pea Shoots Optional, substitute with microgreens if not available
  • 1/2 cup Grated Parmesan Cheese Use dairy-free alternative for vegan options
  • 1/4 cup Olive Oil Extra virgin preferred
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 clove Garlic To taste
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

  • 1 loaf Ciabatta Bread Can substitute with any crusty bread
  • 2 tablespoons Extra Virgin Olive Oil For drizzling

Method
 

Making the Dish
  1. In a food processor, combine the frozen peas, pea shoots, parmesan, olive oil, lemon juice, garlic, salt, and pepper. Blend until a rough paste forms.
  2. Preheat the broiler to high. Lay out slices of ciabatta on a baking sheet and drizzle each slice with olive oil.
  3. Toast the ciabatta under the broiler for 2-3 minutes on each side until golden brown.
  4. Rub a half clove of garlic onto the toasted ciabatta.
  5. Spread a layer of pea pesto over each ciabatta slice and top with additional parmesan, lemon zest, and pea shoots.
  6. Drizzle with extra virgin olive oil and sprinkle with pepper before serving.
