Making the Dish
- In a food processor, combine the frozen peas, pea shoots, parmesan, olive oil, lemon juice, garlic, salt, and pepper. Blend until a rough paste forms.
- Preheat the broiler to high. Lay out slices of ciabatta on a baking sheet and drizzle each slice with olive oil.
- Toast the ciabatta under the broiler for 2-3 minutes on each side until golden brown.
- Rub a half clove of garlic onto the toasted ciabatta.
- Spread a layer of pea pesto over each ciabatta slice and top with additional parmesan, lemon zest, and pea shoots.
- Drizzle with extra virgin olive oil and sprinkle with pepper before serving.
