For the Kabobs
  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 2 cups fresh pineapple cut into chunks
  • 1/4 cup soy sauce or coconut aminos for gluten-free
For the Teriyaki Glaze
  • 1/4 cup honey
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon sesame oil
For Cooking
  • 4-6 skewers wooden or metal

Method
 

Preparation Instructions
  1. Marinate the chicken by mixing soy sauce, honey, garlic, ginger, and sesame oil in a bowl. Cut chicken into pieces and coat with the marinade. Let it rest for 10 minutes.
  2. Cut fresh pineapple into chunks similar in size to chicken.
  3. Thread marinated chicken pieces and pineapple onto skewers, alternating them.
  4. Preheat your grill or broiler to medium-high heat (about 400°F).
  5. Grill the kabobs for 10-12 minutes, turning every 3-4 minutes, and brush with teriyaki glaze towards the end.
  6. Rest kabobs for 5 minutes before serving to allow juices to redistribute.
