Steps
- Heat a large skillet over medium heat and add the ground beef. Break it apart with a spatula, cooking for about 6-8 minutes until it’s browned and no longer pink.
- Add the finely chopped onion to the skillet with the beef. Sauté for around 3-4 minutes until the onion is translucent and softened.
- Stir in the minced garlic along with the chili powder, ground cumin, paprika, salt, and pepper. Cook for another 1-2 minutes until the garlic is fragrant.
- Pour in the diced tomatoes and mix everything well. Allow the mixture to simmer for about 5 minutes.
- Warm the tortillas, either in the microwave or in a dry skillet for about 10-15 seconds on each side.
- Lay a warm tortilla flat and spoon a generous amount of the beef mixture down the center. Top with shredded lettuce and cheese, then carefully roll the tortilla up tightly.
- Serve warm, optionally garnished with extra toppings such as sour cream or salsa.
