Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish with cooking spray.
  2. Chop the broccoli, red bell pepper, and yellow onion as described.
  3. In a skillet, heat olive oil over medium heat, then sauté the bell pepper and onion for about 4 minutes.
  4. Add chopped broccoli and steam with 2-3 tablespoons of water for 2 minutes.
  5. Whisk together eggs, milk, salt, and pepper in a mixing bowl, then stir in cheddar cheese.
  6. Spread sautéed vegetables in the baking dish and pour the egg mixture over them.
  7. Sprinkle remaining cheddar cheese on top of the casserole.
  8. Bake for 30-35 minutes, until the center jiggles slightly.
