  • 1 cup Heavy Cream Full-fat recommended
  • ¾ cup Sugar Adjust based on sweetness of strawberries
  • 1 tablespoon Lemon Juice Optional but recommended
  • 2 Eggs (optional) Beat to pale yellow if used

Method
 

Preparation Steps
  1. Hull 2 cups of fresh strawberries, removing the green tops. Roast at 350°F (175°C) for 15 minutes if desired.
  2. Blend roasted strawberries into a smooth puree and set aside.
  3. In a mixing bowl, whisk together 1 cup of heavy cream and ¾ cup of sugar until smooth for about 2-3 minutes.
  4. Fold the strawberry puree into the cream mixture. Add 1 tablespoon of lemon juice if using.
  5. Pour mixture into ice cream maker and churn for 20-25 minutes until creamy.
  6. Transfer the mixture to an airtight container and freeze for 4-6 hours to set.
  7. Before serving, let ice cream sit at room temperature for 5 minutes for easier scooping.
