Preparation Steps
- Hull 2 cups of fresh strawberries, removing the green tops. Roast at 350°F (175°C) for 15 minutes if desired.
- Blend roasted strawberries into a smooth puree and set aside.
- In a mixing bowl, whisk together 1 cup of heavy cream and ¾ cup of sugar until smooth for about 2-3 minutes.
- Fold the strawberry puree into the cream mixture. Add 1 tablespoon of lemon juice if using.
- Pour mixture into ice cream maker and churn for 20-25 minutes until creamy.
- Transfer the mixture to an airtight container and freeze for 4-6 hours to set.
- Before serving, let ice cream sit at room temperature for 5 minutes for easier scooping.
