- Combine the filling ingredients in a bowl and whisk until smooth and creamy.
- Whip the heavy cream until soft peaks form, then gently fold into the pumpkin mixture.
- Brew the coffee and let it cool for 10 minutes.
- Dip each ladyfinger in the cooled coffee briefly and layer at the bottom of the dish.
- Spread half of the pumpkin mascarpone cream over the ladyfingers.
