  • 1 cup cottage cheese small curd or whipped
  • 1 tsp salt adjust to taste

Method
 

Preparation Steps
  1. Preheat your oven to 325°F (163°C) and spray a 12-cup muffin tin with cooking oil.
  2. In a large mixing bowl, whisk together 8 eggs until frothy and well combined.
  3. Add salt, black pepper, and garlic powder to the eggs, stirring well to combine.
  4. Gently fold in the cottage cheese, Colby Jack cheese, and bacon bits into the egg mixture.
  5. Fill each muffin cup about three-quarters full with the egg mixture.
  6. Place a shallow pan filled with hot water on the lower rack of the oven.
  7. Bake in the preheated oven for 23-25 minutes until the edges are set and the center is slightly jiggly.
  8. Cool for a few minutes then carefully loosen each egg bite from the muffin cups.
