  • 2 lbs boneless skinless chicken thighs or breasts Thighs are recommended for juiciness.
  • 1 onion Thinly sliced; can be substituted with shallots.
For the Cooking Liquid
  • 0.25 cup chicken broth Enhances flavor; can be omitted.
  • 1 lemon Juiced; fresh juice preferred.
  • 1 tbsp olive oil Can substitute with avocado oil.
For the Seasoning
  • 4 cloves of garlic Minced; garlic powder (1 tsp) can be used.
  • 1.5 tsp dried oregano Italian seasoning can be a substitute.
  • 1.5 tsp dried thyme Use fresh thyme if available.
  • 1 tsp fine sea salt Adjust according to dietary needs.
  • 0.5 tsp black pepper Freshly cracked pepper is preferable.

Method
 

Cooking Steps
  1. Place the chicken at the bottom of the slow cooker and layer one thinly sliced onion over it.
  2. Whisk together chicken broth, lemon juice, minced garlic, and olive oil in a bowl. Add oregano, thyme, salt, and pepper.
  3. Pour the sauce over the chicken and onions in the slow cooker.
  4. Cover and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours until chicken reaches 165°F.
  5. Shred the chicken in the slow cooker with two forks and mix with the juices before serving.
