Ingredients

For the Cake
  • 2 cups All-Purpose Flour Can be substituted with gluten-free baking flour
  • 2 teaspoons Baking Powder Acts as a leavening agent
  • 1 cup Granulated Sugar Can be reduced for a less sugary treat
  • 1/2 cup Salted Butter Can switch to unsalted for a cleaner taste
  • 2 large Eggs
  • 1 cup Plain Greek Yogurt Try low-fat yogurt or kefir as substitutes
  • 1 teaspoon Vanilla Extract Opt for pure vanilla extract for richer taste
  • 2 cups Fresh Cherries Frozen cherries can be used if well-drained
  • 1 cup Chocolate Chips/Chunks Dark chocolate is a great substitution

Equipment

  • 9x3-inch springform pan
  • Mixing Bowls
  • whisk
  • Spatula

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C). Line the bottom of a 9x3-inch springform pan with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour and baking powder until combined. Set aside.
  3. In a larger mixing bowl, combine the granulated sugar, melted salted butter, and eggs. Mix until light and fluffy.
  4. Stir in the Greek yogurt and vanilla extract until fully combined.
  5. Gradually add the flour mixture to the wet batter, whisking gently to avoid over-mixing. Batter should remain slightly lumpy.
  6. Gently fold in half of the fresh cherries and chocolate chips into the batter.
  7. Pour the batter into the prepared springform pan and scatter the remaining cherries and chocolate chips on top.
  8. Bake in the preheated oven for 45-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for about 40-60 minutes before releasing it from the pan. Dust with powdered sugar and serve.
