Ingredients
  

For the Rice
  • 2 tablespoons Oil Can substitute with canola or avocado oil.
  • 1 cup Long-grain basmati rice Rinse until water runs clear.
  • 2 cloves Garlic Minced; adjust based on preference.
  • 1 pinch Red chili flakes Adjust for spice preference.
For Zesty Flavor
  • 1 medium Lime Zest and juice.
  • ½ cup Chopped fresh cilantro Use more or less based on taste.
  • to taste Salt
  • Optional Scallions For garnish.

Method
 

Cooking Steps
  1. Heat 2 tablespoons of oil in a large pan over medium heat. Add 1 cup of rinsed basmati rice and sauté for 2-3 minutes until slightly toasted.
  2. Stir in 2 minced garlic cloves and a pinch of red chili flakes. Cook until fragrant, about 30 seconds. Add the zest of one lime, 2 cups of water, and salt to taste.
  3. Bring to a simmer, reduce heat to low, cover tightly, and cook for 15 minutes without lifting the lid.
  4. After 15 minutes, turn off the heat and let the rice sit covered for an additional 10 minutes.
  5. Fluff the rice with a fork, squeeze in the juice of one lime, and fold in ½ cup of chopped cilantro. Garnish with scallions if desired.
