Cooking Steps
- Heat 2 tablespoons of oil in a large pan over medium heat. Add 1 cup of rinsed basmati rice and sauté for 2-3 minutes until slightly toasted.
- Stir in 2 minced garlic cloves and a pinch of red chili flakes. Cook until fragrant, about 30 seconds. Add the zest of one lime, 2 cups of water, and salt to taste.
- Bring to a simmer, reduce heat to low, cover tightly, and cook for 15 minutes without lifting the lid.
- After 15 minutes, turn off the heat and let the rice sit covered for an additional 10 minutes.
- Fluff the rice with a fork, squeeze in the juice of one lime, and fold in ½ cup of chopped cilantro. Garnish with scallions if desired.
