Method
 

Preparation Steps
  1. Wash the spring mix greens under cold water and pat dry. Place in a large salad bowl.
  2. Halve cherry tomatoes, slice cucumber, dice bell pepper, and cube avocado before adding to the bowl.
  3. Thinly slice red onion and add along with shredded carrots to the bowl.
  4. If desired, sprinkle feta and nuts over the salad.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle dressing over salad just before serving.
  7. Toss gently to combine, being careful not to crush the ingredients.
  8. Taste the salad and adjust seasoning if necessary.
  9. Serve immediately to keep it fresh.
