Step-by-Step Instructions
  1. In a small mixing bowl, combine 8 ounces of softened cream cheese with 2 tablespoons of mayonnaise, 1 tablespoon of fresh lemon juice, 1 teaspoon of dill, 1/2 teaspoon of garlic powder, and a pinch of salt and black pepper. Blend until smooth, about 1 to 2 minutes.
  2. Take 8 slices of soft white or whole wheat bread and coat one side of each with the creamy filling. Set aside the coated slices with the spread side facing up.
  3. Thinly slice 1 large cucumber and pat the slices dry. Place cucumber slices evenly on half of the spread-coated bread slices.
  4. Carefully position the remaining slices of bread, spread side down, on top of the cucumber-covered slices. Press gently to seal the sandwiches.
  5. Trim the edges of the sandwiches with a sharp knife for a neat look and slice into triangles or quarters.
  6. Arrange the sandwiches on a platter and sprinkle with parsley or dill before serving.
