- In a small mixing bowl, combine 8 ounces of softened cream cheese with 2 tablespoons of mayonnaise, 1 tablespoon of fresh lemon juice, 1 teaspoon of dill, 1/2 teaspoon of garlic powder, and a pinch of salt and black pepper. Blend until smooth, about 1 to 2 minutes.
- Take 8 slices of soft white or whole wheat bread and coat one side of each with the creamy filling. Set aside the coated slices with the spread side facing up.
- Thinly slice 1 large cucumber and pat the slices dry. Place cucumber slices evenly on half of the spread-coated bread slices.
- Carefully position the remaining slices of bread, spread side down, on top of the cucumber-covered slices. Press gently to seal the sandwiches.
- Trim the edges of the sandwiches with a sharp knife for a neat look and slice into triangles or quarters.
- Arrange the sandwiches on a platter and sprinkle with parsley or dill before serving.
