  • 1 small Red Onion Soak in water for 10 minutes for milder taste

For the Dressing
  • 3 tablespoons Olive Oil High-quality extra virgin for best results
  • 2 tablespoons Lime Juice Lemon juice can be an excellent alternative

Method
 

Preparation
  1. Wash cucumber, tomato, and red onion under cold water. Finely dice cucumber and tomato. Soak red onion in cold water for about 10 minutes, then chop finely.
  2. In a large mixing bowl, combine the diced cucumber, tomato, and red onion with freshly chopped cilantro. Gently mix with a wooden spoon.
  3. Drizzle with olive oil and lime juice, sprinkle salt and pepper to taste, and mix gently.
  4. Allow the salad to sit for 10-15 minutes at room temperature to let flavors meld.
  5. Serve at room temperature or chill slightly in the refrigerator.
