Step-by-Step Instructions for Vegetable Tortilla Roll Ups
- In a mixing bowl, combine 8 ounces of softened cream cheese, 1 cup of sour cream or Greek yogurt, and 1 cup of shredded cheese. Blend until smooth and creamy, about 2-3 minutes.
- Fold in diced bell peppers, chopped green onions, shredded carrots, and chopped spinach. Mix gently using a spatula until all the veggies are evenly coated.
- Spread about 1/3 cup of the filling evenly across a tortilla and roll tightly. Repeat with remaining tortillas.
- Wrap each rolled tortilla securely in plastic wrap and refrigerate for at least 30 minutes.
- After chilling, unwrap the tortillas and slice each roll into approximately 1-inch pinwheels for serving.
