  • 1 cup Sweetened Coconut Flakes use unsweetened for less sugar
  • 2 large Eggs or egg replacers for a vegan option
  • 1/4 cup Coconut Milk or almond milk for a different flavor
For Frying
  • 2 cups Vegetable Oil preheated for best frying results
For the Dipping Sauce
  • 4 oz Cream Cheese or mascarpone for richer flavor
  • 1/2 cup Powdered Sugar adjust to desired sweetness

Method
 

Preparation Steps
  1. Soak the pineapple rings in a mixture of dark and coconut rum for at least 1 hour.
  2. Prepare three bowls: one with flour, one with whisked eggs and coconut milk, and one with sweetened coconut flakes.
  3. Coat each pineapple ring sequentially: dip in flour, then in egg mixture, and finally in coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) in a deep pot.
  5. Fry the coated pineapple rings in batches for about 1 minute on each side until golden brown.
  6. Prepare the dipping sauce by combining softened cream cheese and powdered sugar, mixing until smooth.
  7. Serve the crispy fried pineapple rings with the creamy dipping sauce on the side.
