- In a skillet over medium heat, add olive oil and unsalted butter. Once melted, add sliced cremini mushrooms and sauté for 4-5 minutes until golden.
- Stir in minced garlic and cook for 1-2 minutes until fragrant, then season with salt and black pepper. Remove from heat.
- Butter one side of each slice of sourdough bread, and place two slices buttered-side down in the skillet.
- Layer shredded mozzarella and cheddar cheese on the bread, then distribute the sautéed garlic mushroom mixture on top. Cover with remaining slices buttered-side up.
- Cook over medium-low heat for 3-4 minutes on each side until golden brown and cheese melts.
- Remove from skillet, slice in half, and serve warm with tomato soup.
