- Cut a small slice off the bottom of each zucchini to create a stable base. Using chopsticks, slice each zucchini into thin slits without cutting through to the bottom.
- Place the zucchinis in a baking dish, then melt the butter. Pour it over the zucchinis, spreading it between the slits.
- Combine parmesan cheese, minced garlic, black pepper, paprika, salt, and Italian seasoning. Sprinkle this blend into the slits of the zucchinis and rub it in.
- Bake in the preheated oven for 25-30 minutes until golden brown and tender.
- Remove from oven, let cool slightly, and sprinkle with chopped parsley before serving.
