Step-by-Step Instructions for Green Goddess Grilled Cheese Sandwich
  1. In a small bowl, combine minced chives, tarragon, garlic, and baby spinach with 3 tablespoons of mayonnaise. Stir until well mixed and set aside.
  2. In a separate bowl, blend the softened salted butter with the remaining 4 tablespoons of mayonnaise until smooth. Spread this mixture generously on one side of each slice of bread.
  3. Heat a skillet over medium-low heat and place one slice of bread, butter side down, in the pan. Layer on 1/4 cup of mozzarella cheese, followed by avocado slices, spinach, and shaved asparagus. Top off with another 1/4 cup of mozzarella.
  4. Spread 2 tablespoons of the prepared Green Goddess mixture onto the non-buttered side of another slice of bread. Place this slice on top, green goddess side down.
  5. Cover the pan with a lid and increase the heat to medium. Cook for about 6-7 minutes until golden brown and cheese begins to melt.
  6. Gently flip the sandwich and cook for an additional 6-7 minutes until the other side is also golden brown and cheese is melted.
  7. Repeat the process with remaining ingredients. Slice each sandwich in half and serve warm.
