- Preheat your skillet or grill pan over medium heat for about 5 minutes.
- Spread a generous layer of butter on one side of each sourdough slice.
- On the unbuttered sides of four sourdough slices, layer fresh mozzarella slices and mixed vegetables.
- Drizzle approximately ½ cup of balsamic vinaigrette over the layered veggies.
- Carefully place the remaining slices of sourdough on top with buttered side facing up.
- Transfer the sandwiches to the skillet and grill for about 3-4 minutes per side.
- Once golden-brown and the cheese is melted, slice each sandwich in half and serve warm.
