- Soak the wooden skewers in lukewarm water for at least 30 minutes to prevent burning during grilling.
- In a medium mixing bowl, combine minced garlic, grated Parmesan cheese, olive oil, Italian seasoning, salt, and freshly ground black pepper. Stir until well blended.
- Cut the chicken into bite-sized pieces and add them to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.
- Thread the marinated chicken onto the soaked skewers, leaving a little space between each piece.
- Preheat your grill to medium-high heat (about 400°F or 200°C).
- Lay the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally until the internal temperature of the chicken reaches 165°F (75°C).
- For an optional garlic butter finish, brush the skewers with melted garlic butter after they come off the grill, and sprinkle with additional grated Parmesan.
- Let the skewers rest for a couple of minutes before serving.
