Ingredients

For your delicious skewers
  • 2 pounds Boneless, skinless chicken breasts or thighs Use thighs for juicier bites that are bursting with flavor.
  • 3 cloves Garlic, minced Adds a savory depth that elevates the dish.
  • 1/4 cup Parmesan cheese, grated Brings a rich, cheesy flavor; substitute with nutritional yeast for a dairy-free option.
  • 2 tablespoons Olive oil Helps marinate the chicken and keeps it moist while grilling.
  • 1 teaspoon Italian seasoning Adds a lovely herbal complexity; feel free to swap it with dried oregano or thyme.
  • 1 teaspoon Salt Essential for seasoning; adjust according to your taste preferences.
  • 1 teaspoon Freshly ground black pepper Essential for seasoning; adjust according to your taste preferences.
  • 1 juiced Lemon This brightens the marinade and provides a zingy acidity that balances the richness.

  • Skewers

Method

Step-by-Step Instructions
  1. Soak the wooden skewers in lukewarm water for at least 30 minutes to prevent burning during grilling.
  2. In a medium mixing bowl, combine minced garlic, grated Parmesan cheese, olive oil, Italian seasoning, salt, and freshly ground black pepper. Stir until well blended.
  3. Cut the chicken into bite-sized pieces and add them to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.
  4. Thread the marinated chicken onto the soaked skewers, leaving a little space between each piece.
  5. Preheat your grill to medium-high heat (about 400°F or 200°C).
  6. Lay the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally until the internal temperature of the chicken reaches 165°F (75°C).
  7. For an optional garlic butter finish, brush the skewers with melted garlic butter after they come off the grill, and sprinkle with additional grated Parmesan.
  8. Let the skewers rest for a couple of minutes before serving.
