Method
 

Step-by-Step Instructions
  1. Whisk together olive oil, honey, apple cider vinegar, mustard, black pepper, and poppy seeds to create the marinade.
  2. Cut chicken into 1-inch cubes, slice pineapple, and chop the bell pepper and zucchini into bite-sized pieces.
  3. Place chicken, pineapple, zucchini, and bell pepper in a large Ziploc bag, pour the marinade, seal, and refrigerate for 30 minutes.
  4. Preheat grill to medium-high heat, about 375°F.
  5. Assemble skewers with marinated chicken, pineapple, zucchini, and bell pepper.
  6. Grill kabobs for about 8–10 minutes per side, flipping halfway through, until chicken reaches an internal temperature of 165°F.
