Step-by-Step Instructions
  1. Preheat your grill to medium heat, around 350°F (180°C). Grease a cast iron skillet with butter or cooking oil.
  2. Slice red potatoes thinly and season with salt, pepper, and smoked paprika. Toss to coat.
  3. Layer thinly sliced onions at the bottom of the skillet, then add the seasoned potato slices.
  4. Pour milk over the layered potatoes and onions, then place cubes of butter on top.
  5. Cover the skillet tightly with aluminum foil and place it on the grill. Cook for about 45 minutes.
  6. Remove the foil and grill for an additional 10 minutes, or until the potatoes are tender and slightly charred.
  7. Remove from the grill, garnish with chopped chives, and serve warm.
