  • 1 tablespoon Ginger Grate fresh for enhanced flavor.
  • Salt and pepper To taste.

  • 1 pound Chicken breast Cut into cubes; can substitute with shrimp or tofu.

Method
 

Steps
  1. In a mixing bowl, combine coconut milk, soy sauce, lime juice, brown sugar, red curry paste, minced garlic, grated ginger, salt, and pepper. Whisk until well blended.
  2. Add chicken breast cubes to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high temperature, around 400°F (200°C). Soak wooden skewers in water.
  4. Thread marinated chicken onto soaked skewers, leaving space between each piece for even cooking.
  5. Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until chicken reaches 165°F internally.
  6. Remove skewers from the grill, let them rest, and serve hot garnished with fresh lime wedges and herbs.
