Step-by-Step Instructions for Grilled Zucchini Crostini
  1. Preheat your grill to a medium heat, around 350°F, for 10-15 minutes.
  2. Slice the zucchini into ¼ inch thick rounds, brush with canola oil, and season with garlic salt, black pepper, and smoked paprika.
  3. Slice the French bread into ½-inch thick pieces and brush one side with canola oil.
  4. Place the zucchini rounds directly on the grill and grill for about 5 minutes. Flip the zucchini and bread after 2 minutes.
  5. Spread goat cheese on the grilled crostini immediately after removing them from the grill.
  6. Top the goat cheese with grilled zucchini rounds and serve.
