For the Salad
  • 8 ounces Rotini Pasta can swap for fusilli or penne
  • 1 cup Oven Roasted Turkey or cooked chicken or ham
  • 1 cup Pepperoni or substitute with salami or chorizo
  • 1 cup Salami can use any other deli meat
  • 1 cup Provolone Cheese mozzarella or cheddar are alternatives
  • ½ cup Parmesan Cheese or Romano or nutritional yeast for vegan option
  • 2 cups Iceberg Lettuce or romaine or spinach
  • 1 cup Cherry Tomatoes or diced tomatoes
  • ½ cup Pepperoncinis or banana peppers
  • ½ cup Red Onion or green onions or shallots
For the Dressing
  • 1 cup Mayonnaise or Greek yogurt or vegan mayo
  • ¼ cup Red Wine Vinegar or apple cider vinegar
  • 2 tablespoons Pepperoncini Juice can be omitted
  • 1 teaspoon Dried Oregano or fresh oregano or Italian seasoning
  • 2 cloves Garlic or garlic powder as a substitute
  • to taste Salt for enhancing flavors
  • to taste Black Pepper for enhancing flavors

Method
 

Preparation Steps
  1. In a medium bowl, whisk together mayonnaise, red wine vinegar, pepperoncini juice, dried oregano, minced garlic, salt, and black pepper until smooth. Chill in the fridge for at least 30 minutes.
  2. Fill a large pot with water, add a pinch of salt, and bring to a boil. Add rotini pasta and cook for 9-10 minutes until al dente. Drain and rinse under cold water.
  3. Chop meats and veggies into uniform pieces for even distribution.
  4. In a large mixing bowl, add cooled pasta and combine with meats, cheese, and vegetables. Mix well.
  5. Pour the chilled dressing over the salad and toss gently. Adjust seasonings if necessary.
  6. Cover with plastic wrap and chill for at least 2 hours before serving.
