Step-by-Step Instructions
  1. In a large mixing bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper until well combined. Set aside to mingle.
  2. Slice the zucchini, bell peppers, and red onion into uniform pieces. Toss vegetables and cherry tomatoes in the marinade.

  4. Place the marinated veggies on the grill for about 5-7 minutes, turning occasionally.
