  • 2 pounds Yukon Gold or Russet Potatoes peeled and cubed
For the Greens
  • 2 cups Cabbage or Kale chopped
  • 1 cup Swiss Chard, Spinach, or Beet Greens optional
For the Creaminess
  • 4 tablespoons Salted Butter divided
  • 1 cup Heavy Cream or Whole Milk or Plant-Based Milk for dairy-free
For the Seasoning
  • 4 scallions Green Onions chopped
  • to taste Salt
  • to taste Pepper
  • 2 cloves Garlic optional, minced

Method
 

Step-by-Step Instructions
  1. Peel and cube the potatoes, place in salted boiling water, and cook until fork-tender, about 15-20 minutes.
  2. In a skillet, melt butter and sauté greens for 5-7 minutes. Add garlic in the last minute.
  3. Warm cream or milk with remaining butter in a saucepan over low heat until melted.
  4. Mash drained potatoes until smooth, avoiding lumps.
  5. Combine warm cream mixture into the potatoes and mix until creamy. Adjust seasoning.
  6. Fold in sautéed greens and scallions until well combined.
  7. Season with salt and pepper, serve hot with butter on top.
