Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Carefully slice each chicken breast horizontally to create a pocket.
  3. In a mixing bowl, combine ricotta cheese, Parmesan, fresh herbs, minced garlic, and lemon zest, then season with salt and pepper.
  4. Fill each chicken breast pocket with the ricotta mixture and secure with toothpicks if necessary.
  5. Heat olive oil in a skillet over medium heat and sear the stuffed chicken for 4-5 minutes on each side.
  6. Transfer seared chicken to the baking dish, pour marinara sauce over the top, and sprinkle mozzarella on top.
  7. Bake for 20-25 minutes until the cheese is bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  8. Let it rest for a few minutes before serving, removing any toothpicks used.
