Preparation
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
- Carefully slice each chicken breast horizontally to create a pocket.
- In a mixing bowl, combine ricotta cheese, Parmesan, fresh herbs, minced garlic, and lemon zest, then season with salt and pepper.
- Fill each chicken breast pocket with the ricotta mixture and secure with toothpicks if necessary.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken for 4-5 minutes on each side.
- Transfer seared chicken to the baking dish, pour marinara sauce over the top, and sprinkle mozzarella on top.
- Bake for 20-25 minutes until the cheese is bubbly and the chicken reaches an internal temperature of 165°F (74°C).
- Let it rest for a few minutes before serving, removing any toothpicks used.
