Step‑by‑Step Instructions for Honey BBQ Chicken Rice
  1. Start by seasoning the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Let them sit for about 10 minutes.
  2. Heat a large skillet over medium heat and add a drizzle of oil. Sear the seasoned chicken thighs for about 3–4 minutes on each side until golden brown. Remove and set aside.
  3. In a bowl, mix together your BBQ sauce, honey, soy sauce, and minced garlic until thoroughly combined.
  4. Add uncooked long-grain rice to the same skillet over medium heat and toast it lightly for 1–2 minutes.
  5. Pour chicken broth into the skillet with the toasted rice, followed by half of your prepared BBQ sauce mixture. Stir well.
  6. Return the seared chicken thighs to the skillet, placing them on top of the rice. Drizzle the remaining BBQ sauce over the chicken and cover with a lid.
  7. Simmer for about 15 minutes until chicken reaches a safe internal temperature and rice is tender.
  8. Stir in any mixed vegetables you’ve chosen and cook for an additional 5 minutes.
  9. Remove from heat and let it sit for about 5 minutes with the lid on. Garnish with chopped green onions before serving.
