- Pat the top sirloin steak cubes dry with paper towels, then season with paprika, salt, and black pepper. Allow to rest for 10 minutes.
- In a bowl, whisk together soy sauce, water or beef broth, garlic, honey, sesame oil, rice vinegar, oregano, and cornstarch until smooth. Set aside.
- Heat vegetable oil in a skillet over medium-high heat. Add half the steak cubes and sear for 2 minutes per side, then transfer to a plate. Repeat with remaining steak.
- In the hot skillet, pour in some of the honey garlic sauce to deglaze, scraping up browned bits. Return steak bites and coat with sauce, cooking for 1-2 minutes until thickened.
- Plate the steak bites, drizzle with extra sauce, and garnish with sesame seeds and sliced green onions. Serve warm.
