Step-by-Step Instructions
  1. Generously season your boneless, skinless chicken breasts with salt and pepper, coating both sides evenly.
  2. Preheat your skillet over medium-high heat while you prepare the chicken.
  3. In the preheated skillet, add olive oil and warm for about a minute. Cook chicken for 6–7 minutes on each side, or until golden brown and fully cooked.
  4. While the chicken rests, slice the avocado, cheese, red onion, and tomato thinly.
  5. Spread mayonnaise and Dijon mustard on each slice of bread. Layer sliced chicken, avocado, cheese, red onion, and tomato.
  6. Heat skillet again, add butter or olive oil, and grill sandwiches for about 3–4 minutes on each side until golden brown and cheese is melted.
  7. Remove sandwiches from skillet and cool for a minute. Slice in half and serve warm.
