For the Dates
  • 12 pieces Medjool Dates Fresh dates are preferred for their chewy texture.
For the Filling
  • 8 ounces Goat Cheese Creamy and tangy cheese.
For the Topping
  • 1 cup Pecans Chopped, can substitute with walnuts or almonds.
  • 2 tablespoons Maple Syrup Can substitute with honey or agave syrup.
  • 1 teaspoon Fresh Thyme Can substitute with rosemary or other herbs.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Combine chopped pecans, maple syrup, paprika, salt, and fresh thyme in a medium bowl.
  3. Spread coated pecans on a baking sheet and roast for 8–10 minutes, until golden brown.
  4. Slice Medjool dates lengthwise and remove the pits.
  5. Fill each date with about a teaspoon of goat cheese.
  6. Sprinkle roasted pecans on top of each stuffed date, pressing in slightly.
  7. Serve immediately or chill until ready to serve. Optionally, warm before serving.

Notes
