Preparation
- Preheat your oven to 400°F (200°C).
- Combine chopped pecans, maple syrup, paprika, salt, and fresh thyme in a medium bowl.
- Spread coated pecans on a baking sheet and roast for 8–10 minutes, until golden brown.
- Slice Medjool dates lengthwise and remove the pits.
- Fill each date with about a teaspoon of goat cheese.
- Sprinkle roasted pecans on top of each stuffed date, pressing in slightly.
- Serve immediately or chill until ready to serve. Optionally, warm before serving.
