- Preheat your oven to 230°C (450°F).
- In a large skillet over medium-high heat, add the crumbled fresh hot pork sausage and brown for about 5 minutes.
- Toss in the chopped scallion whites and minced garlic to the skillet and sauté for about 20 seconds.
- Add rinsed pinto or black beans and low-sodium chicken broth, mashing slightly, and stir in chili powder, ground cumin, and coarse salt.
- Layer half of the tortilla chips, half of the bean mixture, half of the sausage, and half of the cheese on an ovenproof platter. Repeat layers.
- Bake for about 5 minutes until the cheese is melted and bubbly.
- Garnish with chopped scallion greens and serve immediately with salsa and sour cream.
