Step-by-Step Instructions
  1. Preheat your oven to 230°C (450°F).
  2. In a large skillet over medium-high heat, add the crumbled fresh hot pork sausage and brown for about 5 minutes.
  3. Toss in the chopped scallion whites and minced garlic to the skillet and sauté for about 20 seconds.
  4. Add rinsed pinto or black beans and low-sodium chicken broth, mashing slightly, and stir in chili powder, ground cumin, and coarse salt.
  5. Layer half of the tortilla chips, half of the bean mixture, half of the sausage, and half of the cheese on an ovenproof platter. Repeat layers.
  6. Bake for about 5 minutes until the cheese is melted and bubbly.
  7. Garnish with chopped scallion greens and serve immediately with salsa and sour cream.
