Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Position one rack in the center and the other 6 inches from the broiler.
  2. Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add scallions with a pinch of kosher salt and sauté for 2-3 minutes until tender.
  3. Add 2 cups of corn kernels to the skillet and cook for 3-5 minutes, stirring until the corn caramelizes slightly.
  4. Reduce heat to low and stir in 8 ounces of cream cheese until fully melted and well combined.
  5. Remove from heat and fold in 1 cup of sour cream and ¾ cup of crumbled cotija cheese. Spread the mixture evenly in the skillet.
  6. Transfer the skillet to the oven and bake for 10-12 minutes until bubbling and golden.
  7. Switch to broil and sprinkle ¼ cup of cotija cheese over the top. Broil for 2-3 minutes until golden and crispy.
  8. Garnish with reserved scallion greens and cilantro. Serve warm with tortilla chips or veggie sticks.
