  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes.
  3. Beat the cream cheese until smooth. Add 1 cup of sugar, salt, sour cream, vanilla, and lemon juice. Mix until well combined.
  4. Add eggs one at a time, mixing on low speed. Pour filling over cooled crust.
  5. Bake for 55-65 minutes until edges are set and the center jiggles slightly.
