Method
 

Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Cut your Yukon Gold potatoes into quarters and spread them evenly on the greased baking sheet. Roast for 35-40 minutes.
  3. Chop the green onions and cucumber, and coarsely chop the pistachios. Combine in a mixing bowl with fresh dill and parsley.
  4. Whisk together mayonnaise, mustard, minced garlic, lemon juice, maple syrup, salt, pepper, and optional red chili flakes.
  5. Transfer potatoes to a large bowl, drizzle with dressing, and toss gently.
  6. Add the reserved vegetable mixture and fold gently until combined.
  7. Serve warm or chill in the fridge for at least 30 minutes before serving.
