Ingredients

  • 2 large eggs use room temperature for best results
  • 1 cup milk room temperature
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract pure extract recommended
  • 1 cup all-purpose flour no known substitutions
  • 1/2 cup brown sugar can substitute with granulated sugar
  • 2 teaspoons baking powder ensure it's fresh
  • 1/2 teaspoon salt adjust to taste
  • 1 teaspoon ground cinnamon can substitute with nutmeg
  • 2 ripe bananas chopped for texture
For Frying
For the Glaze
  • 1 cup powdered sugar can reduce or substitute
  • 2 tablespoons additional milk use as needed
  • 1/2 teaspoon vanilla extract optional but recommended

Method
 

Prepare the Batter
  1. In a medium bowl, whisk together eggs, milk, melted butter, and vanilla extract until smooth.
  2. In a separate large bowl, combine flour, brown sugar, baking powder, salt, and ground cinnamon.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined, then fold in chopped bananas.
Heat Oil
  1. In a large pot or deep skillet, pour in enough vegetable oil to reach a depth of 2 inches and heat over medium-high heat to 350°F.
  2. To test, drop a small amount of batter into the oil; it should bubble and rise.
Fry Fritters
  1. Carefully drop spoonfuls of the banana batter into the hot oil and fry in batches for 4-5 minutes.
  2. Turn them halfway through until golden brown on both sides; transfer to a plate lined with paper towels.
Make Glaze
  1. Mix powdered sugar, milk, vanilla extract, and ground cinnamon until smooth; adjust thickness with more milk if needed.
Glaze Fritters
  1. Dip the tops of warm fritters into the glaze, allowing excess to drip off, then place on a wire rack.
