Preparation
- Rinse and dry the chicken thighs, then rub with salt, pepper, and lime juice.
- Combine yogurt, garlic, ginger, cumin, coriander, turmeric, paprika, and cayenne in a bowl to make the marinade.
- Coat the chicken with the marinade, cover, and refrigerate for at least 6 hours or up to 24 hours.
- Preheat the broiler to high or set the oven to 450°F.
- Line a baking sheet with foil or parchment paper, and place a greased wire rack on top if desired.
