  • 1 cup hot water
For the Frosting
  • 1 cup blueberries (fresh or frozen)
  • 1 tablespoon lemon juice
  • 0.5 cups unsalted butter slightly cold
  • 4 cups powdered sugar
  • 1 tablespoon lemon zest
  • 0.5 cups heavy cream
For the Chocolate Drip
  • 1 cup semi-sweet chocolate chips
  • 0.5 cups heavy cream
For Decoration
  • 1 cup fresh blueberries
  • 1 cup fresh blackberries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare three 8-inch cake pans with baking spray and parchment paper.
  2. Sift together dry ingredients in a mixing bowl.
  3. Whisk together the wet ingredients in a separate bowl and combine with the dry ingredients.
  4. Divide the batter among the cake pans and bake for 28-34 minutes.
  5. While cakes cool, prepare the blueberry puree by cooking blueberries with lemon juice until soft.
  6. Beat the frosting ingredients together until light and airy.
  7. Heat heavy cream and pour over chocolate chips for the chocolate drip.
  8. Assemble the cake by layering it with frosting and drizzle with chocolate once chilled.
  9. Decorate with fresh blueberries and blackberries before serving.
