Step-by-Step Instructions
  1. In a large bowl, combine cold mashed potatoes with cheddar cheese, crumbled bacon, chopped green onions, and garlic powder. Stir until mixed, then add a beaten egg and mix until smooth.
  2. Scoop about 1 tablespoon of the mixture, rolling it into a ball. If soft, refrigerate for 30 minutes to firm up.
  3. Prepare a breading station with flour, beaten egg, and panko breadcrumbs. Roll each ball in flour, dip in egg, then coat in breadcrumbs.
  4. Heat oil to 350°F (175°C). Fry potato bites in batches for 2-3 minutes until golden brown.
