- Preheat a non-stick skillet over medium heat. Melt 1 tablespoon of butter until it bubbles gently.
- Tilt the skillet to coat it with the melted butter, then add a slice of bread. Spread spinach pesto on top.
- Tear burrata into pieces and place them on the pesto-covered bread slice.
- Top with another slice of bread and press down gently. Cook for 3-4 minutes until golden brown, then flip.
- Cook the second side for another 3-4 minutes until golden brown and crisp.
- Remove from the skillet, let rest for a minute, then slice in half and serve.
