Instructions
  1. Peel and chop the mango into small chunks and blend until smooth, about 1–2 minutes.
  2. In a bowl or jar, combine rolled oats and non-dairy milk. Stir thoroughly for 30 seconds.
  3. Fold the mango puree into the oat mixture until evenly distributed.
  4. Add chia seeds, pumpkin seeds, and coconut flakes, stirring vigorously for 1–2 minutes.
  5. Seal and refrigerate for at least 1 hour, preferably overnight.
  6. Before serving, adjust consistency with more non-dairy milk if desired, and top with coconut flakes and pumpkin seeds.
