Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) with the rack positioned in the lower third.
  2. Pat the chuck roast pieces dry with paper towels and season generously with kosher salt.
  3. Heat a tablespoon of vegetable oil in a large Dutch oven and sear the beef for 10 minutes until browned.
  4. Reduce heat, add sliced sweet onion and cook for 4 minutes, then stir in garlic and ginger for 1 more minute.
  5. Mix in gochujang paste, brown sugar, and soy sauce, stirring for 1 minute to combine flavors.
  6. Return the browned beef to the Dutch oven, pour in beef stock, and bring to a simmer for 5 minutes.
  7. Cover and transfer to the oven, braising for 2 hours until the beef is tender.
  8. Remove from the oven, let rest for 10-15 minutes, then slice and serve garnished with cilantro, rice, and kimchi.
