Layers
  • 1 cup strawberries pureed; fresh raspberries can be an alternative.
  • 1 cup blueberries pureed; frozen blueberries work well, thawed.
  • 1 cup vanilla yogurt can substitute with Greek or coconut yogurt.
  • 1/4 cup sugar adjust to taste based on fruit sweetness.
  • 1 tablespoon lemon juice lime juice is a great substitute.
Topping
  • 1/2 cup whipped cream homemade preferred for freshness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare your pie crust.
  2. Bake the pie crust for 15 minutes or until golden brown.
  3. In a mixing bowl, combine vanilla yogurt, sugar, and lemon juice until smooth.
  4. Split the yogurt mixture; mix one half with pureed strawberries and the other with pureed blueberries.
  5. Layer the strawberry mixture in the cooled crust, followed by the blueberry mixture. Swirl gently.
  6. Spread whipped cream over the pie in a decorative manner.
  7. Refrigerate for at least 2 hours to set the layers.
  8. Slice and serve, optionally garnished with fresh berries.
